Adventures in the Kitchen
Lately I've been feeling (and acting) very adventurous in the kitchen! In the last couple months I've made several new recipes, and who knows how many I've made in the last year! I really enjoy trying new foods, both for the challenge and for the tastes! Plus, I like cooking yummy foods for my husband. 80)
Right now I'm nibbling on some (cold) leftover slow cooker beef and broccoli. I paired it with veggie fried rice. Both were brand new recipes. The beef and broccoli was delicious. The only substitute I made was to use coconut palm sugar instead of brown sugar. The fried rice was okay, mainly because I didn't let the rice cook long enough to actually get fried. It's not my first time attempting at failing at fried rice. I'm sure I'll try again one day.
Currently, I've got paleo granola bars cooling in the fridge. Nuts, seeds, raisins, honey, coconut oil, and a little vanilla, salt and cinnamon. Easy peasy. I shall see if they're any good soon... (brief pause to find out)...yummy!!
Last night we had Jon and Mo and their girls over for dinner. I made a new pork loin recipe. It was super simple! Put pork loin in slow cooker. In a small bowl mix lemon juice, garlic, parsley, thyme and salt and pepper. Pour over pork, and cook on low for 3 1/2 - 4 hours. (They brought green beans and sweet potato casserole, lest you think we had a meat only meal haha.)
And then for dessert, I had made a paleo German chocolate pecan pie. Jon said it reminded him of a Caramel Delight cookie. It was very yummy! However, I won't make that too often, since some of the ingredients are rather expensive.
On Sunday, I made some chicken and squash soup. I will definitely be making that again: Easy, healthy and delicious! Another good soup I've made recently is tortilla vegetable chicken soup. The last time I made it, I used corn chips instead of flour tortillas. Even without chips of any kind, it was still really tasty.
Recently, I made a new shrimp recipe: honey grilled shrimp. Instead of using bottled Italian dressing, I made my own from scratch. I couldn't stop eating them! We used our indoor grill, but I'd be curious to (have Justin) grill them on the charcoal grill. That same day, I made some bacon wrapped, cheese stuffed dates that were so good!
Pumpkin chili and paleo brownie bites are also recent (and deliciously successful) new recipes. The pumpkin chili has a great creamy texture and subtle autumnal flavors. I think it's my new favorite chili! And the brownie bites are a great sugar free substitute for a chocolate fix!
I could go on and on, but I'll save some of my other kitchen adventures for another day!
